SLOW COOKER EASY TURKEY AND DRESSING - A.M.
(yummy for a Sunday)

7.8 oz. pkg stuffing mix
½ cup hot water
2 T. butter, softened
1 onion, chopped
2 carrots, chopped into about ½ “ thickness
2 celery stalks, finely chopped
1 turkey breast (usually about 3 pounds) with skin, bone-in
Dried basil
Poultry seasoning
Salt and pepper

Grease slow cooker. Spread dry stuffing mix in slow cooker. Add hot water and butter and stir.
Salt and season turkey breast. Brown both sides of turkey breast in a skillet over medium–high heat with 1 T. vegetable oil. Set aside.
Add onion, carrots and celery to skillet. Saute for a few minutes until veggies are softened.
.Place veggies atop stuffing mix. Place turkey, bone side up on top of everything.
Cover and cook on low 6 hours until meat thermometer registers 170 degrees. (* Do not overcook or turkey will be dry*)
Remove turkey. Gently stir stuffing and veggies and allow to sit for 5 minutes before serving.
Slice turkey and serve on a platter with stuffing.
*** Serve with mashed potatoes, cranberry sauce (from a can!) and gravy (from a packet of course!)***


TURKEY BAKE - Suzanne, Kingston
(great for turkey and gravy leftovers)

l 300gm pkg of noodles
¼ cup margarine
3 ½ cups of milk
¼ cup flour
2 ½ cups of gravy
¾ tsp salt
4 cups chopped cooked turkey
1/8 tsp pepper
½ cup breadcrumbs
¼ cup margarine

Cook the noodles according to package instructions. Drain. Set aside. In a large pot, melt margarine, stir in flour, salt and pepper. Slowly add milk, stirring till thick for 1-2 minutes. Add gravy, then turkey and cooked noodles. Place in a roasting pan. Bake covered for 35 minutes at 350F. Then toss together breadcrumbs and melted margarine. Sprinkle on top. Bake uncovered 10 minutes.


TURKEY SPAGHETTI SAUCE - Ursula, Toronto
(another great recipe for turkey scraps and leftovers)

shortening
l diced onion
l can spaghetti sauce
some ketchup
garlic, salt, pepper, basil, oregano, majoram, parsley, salt and pepper
cooked turkey bits

Brown onion in shortening. Add turkey and spices, stirring frequently. Add sauce. Cook for l/2 hour and pour over your favorite pasta. My kids like this better than the typical hamburger spaghetti sauce.
